So how do you get the temperature to where you want it. Do you have bigger units to make more quantity.

When you pour your cultured milk into the Yogotherm, you should have already heated it to about 110-115 degrees F on your stove. If the milk is this temperature when you pour it into the Yogotherm, and you close up the Yogotherm immediately, it will retain the required temperature range for the incubation time (even without electricity). If you are working in a particularly chilly environment (for example, less than 65 degrees F or so), you might want to also toss a towel or blanket over the Yogotherm, as it is designed to hold temperature in an average room temperature setting.
