      Bought this to use for making my Italian cheese recipes. Is it a stand alone culture? Now I'm not sure.
      I thought it was because I make Mozz, Provolone and other things all the time - but was using up my other cultures first.
      When it calls for thermo. culture in my books, is this the right thing? Thanks - hope I didn't waste my dollars. I have a LOT of it. Thank you! MW

      The Thermo B contains the Streptococcus thermophilus; Lactobacillus delbrueckii subsp. bulgaricus bacteria which allows it to be a stand alone culture.
      There are different thermo. cultures that can be used to create different flavors and textures. If there is something specific you are trying to make, please contact us and we can help determine which culture would work the best.

      The package size is 10 g. How many teaspoons can I expect to get from a package?

      I'm glad you asked -- in fact, this product JUST went through a change (as of early November 2013) and it is now labeled as a "1 DOSE" packet, which can be confusing to small-scale cheesemakers. The 1 DOSE refers to large, commercial-sized batches of 30-60 gallons of milk. The home user would use just a portion of the packet, obviously! The 1 DOSE packet contains roughly the same amount as the old 10-gram packet, but the actual weight will vary, depending on the activity level (strength) of each lot of this culture as it comes from the manufacturer. Please note: home users will not have to adjust for this minor variation between lot strengths, as it will not have an impact on small batches of five gallons or less.       So, to answer your original question, the Thermo B 1 DOSE (formerly the 10-GRAM) pouch contains approximately 4 teaspoons of culture, but this could vary slightly from lot to lot.
