      I noticed that this is a 50 dcu packet but your usage is measured in tsp. Is this just simplified? Do I more precisely use 1 dcu per 2 gallons of milk?
      Hi Anthony,

      It is tricky measuring culture for small batches because if you go too small (with culture dosage) you have the potential of not getting adequate representation of all of the strains in the blend, which could result in an imbalance as the cultures replicate. As a result, we end up having to over-inoculate for small batches to ensure that all of the bacteria are represented. Hence, for most 1-5 gallon recipes (using bacteria blends), we have a minimum dosage of the 1/4 tsp. Once you get to larger batches (ie: 10 gallons), you could dose by using the DCU amount and a gram scale.
