  • Usage Info
    One full tablet will coagulate 50 liters (approx. 13 gallons) of milk. Tablets are scored and can be divided into halves or quarters for smaller quantities of milk. Dissolve tablet or portion of tablet in 1/2 cup cool, non-chlorinated water. Mix 1/4 tsp. salt per 1/4 tablet into solution. Add evenly to warmed milk, stirring no more than 3 minutes.

      what type of milk should be used.
      I used one table for one gallon of Vit D milk, and it did not coagulate.

      There are a few different factors that could be causing your milk to not coagulate. In our FAQ section, we have some troubleshooting possibilities that may help your results. Also, I want to make sure you are using the tablets correctly. There are usage directions under the product page, in the additional information section as well as on the package.

      I recently purchased a 10 tablet packet of Marschall M-50 coagulant not knowing that each tablet will coagulate about 13 gallons of milk! I only make one or two at a time and I don't think I can break the tablets into 13ths with much accuracy... Is it possible to dissolve a tablet and then store it as liquid? If so, how much of the diluted solution is necessary for one gallon of milk? Thank you for your help.

      Unfortunately, diluted coagulant cannot be stored for later use. It will lose activity very quickly -- even within the hour -- once diluted in water.
      The tablets are scored into fourths, but that might still be a bit too much for a one gallon batch of most types of cheese. You should be able to break a quarter-tablet roughly into half again (giving you about 1/8 tablet), and then use about 2/3 of your diluted solution to coagulate a one-gallon batch of most cheese types.
