GEO 17

GEO 17 Geotrichum candidum is a yeast that provides a mold-like appearance and very mild flavor and aroma. GEO 17 enhances the appearance and activity of Penicillium candidum strains; which when used in combination will help minimize proteolysis and lengthen the storage time of the ripened cheese.

A key agent in the ripening of certain cheeses, Geotrichum candidum implants very rapidly on a cheese surface and has a synergistic effect on the implantation on flora such as Brevibacterium linens that require a neutral environment.

Usage Rate Hobby Level  Suggested usage rate approximately one small pinch (less than 1/8 tsp.) added directly to 2 gallons of milk. Alternatively may be sprayed on: dilute 1/8 tsp. in 4-8 oz. buffered water (8 oz. non-chlorinated water with 1/8 tsp. salt and 1/8 tsp. sugar); allow 16 hours reactivation in water at refrigeration temperatures before using.

    I've just received my GEO17 LYO 10D in the mail. While the page on which it's found (here) indicates that this is certified kosher (OU-dairy), there is no hechsher/kashrut certification mark on the actual packet. Is this product still kosher?

    The Geo 17 is still certified Kosher. We will email you the kosher certification. We are currently looking into why the manufacture has changed the label.

    how should the mold powder be stored?
    Hi Diane,
    All freeze-dried cultures, molds, etc. should be stored in the freezer for best results. It is okay if they are out of the freezer for a number of days, even a week or more, depending on ambient temperatures -- but for optimal shelf life for the long term, store in the freezer with foil pouch clipped shut and sealed inside a freezer bag or other air-tight container.
