      Will this make more of a Greek style feta rather than a Danish style? If so, would adding Aroma B culture make it more like a Danish feta?
      Hi Kim,
      There are many different cultures used in the making if Feta cheese. Primarily, traditional Feta will have a strong pungent aroma and acid flavor. The aroma comes from the natural lipase in the milk when made from sheep or goat milk. Most of the feta in the US and the Danish feta is made from cows milk which gives it a milder flavor. A kid or lamb lipase can be added to steer it towards the more traditional flavor. The Feta Culture we offer will provide a little "creamier" flavor without the addition of the lipase. If you want more creamy notes, I suggest using the MM series.

      How does this differ in flavor from MT1?
      Hello,

      This feta culture and the MT1 are quite similar, differing by just one bacteria (the MT1 does not have Lactobacillus delbrueckii subsp. lactis, while this culture does). The difference in flavor is very subtle, and subject to personal preference.
