  • Usage Info
    Suggested usage rate approximately one small pinch (less than 1/8 tsp.) added directly to 2 gallons of milk. Alternatively may be sprayed on: dilute 1/8 tsp. in 4-8 oz. buffered water (8 oz. non-chlorinated water with 1/8 tsp. salt and 1/8 tsp. sugar); allow 16 hours reactivation in water at refrigeration temperatures before using.

      I'm not sure when to use this product? What cheeses would benefit from its use?
      Hello Cameron,
      The CUM is a ripening culture. CUM contains Candida utilis which is a yeast that helps neutralize the pH and is somewhat salt resistance. It is normally used as an adjunct with other ripening cultures.
      As far as which cheeses would benefit would be any smear ripened cheese.
