Usage Rate Hobby Level  We recommend individual experimentation when using lipase with your milk to achieve desired effect. A good starting point is a pinch to 1/8 tsp. of lipase per 2 gallons of milk, to be added at same time as culture.

    what is the self life of this?
    Hi Vin,
    Dry lipase enzymes that we obtain from our supplier typically has about a 12 month shelf life for optimum flavor development when stored at freezer temps of -15F. We have tested the stability over an additional 12 months and have seen a range of 5-25% decrease in enzyme activity. Typically the usage rate is increase accordingly. When stored refrigerated, it is estimated to have a 50%-75% reduction in shelf life, around 3- 6 months.
