GEO 17

GEO 17 Geotrichum candidum is a yeast that provides a mold-like appearance and very mild flavor and aroma. GEO 17 enhances the appearance and activity of Penicillium candidum strains; which when used in combination will help minimize proteolysis and lengthen the storage time of the ripened cheese.

A key agent in the ripening of certain cheeses, Geotrichum candidum implants very rapidly on a cheese surface and has a synergistic effect on the implantation on flora such as Brevibacterium linens that require a neutral environment.
